Peel and dice the sweet potato into half-inch cubes.
Heat half of the olive oil in a skillet over medium heat and add the sweet potato cubes. Cook until tender and slightly browned, about 10-12 minutes, then remove from the pan.
Add the remaining olive oil to the pan and add the ground turkey, garlic powder, dried oregano, sea salt, and black pepper.
Cook the turkey, breaking it up with a spatula, until browned and cooked through.
While the turkey is cooking, bring a small pot of water to a boil. Carefully lower the eggs into the water and boil for 6-7 minutes for a soft-boiled center.
Immediately transfer the eggs to an ice bath for 2 minutes, then peel and slice them in half.
Stir the fresh spinach into the skillet with the turkey just until wilted.
Assemble your bowl by layering the roasted sweet potatoes and the turkey-spinach mixture.
Top the bowl with the soft-boiled eggs, sliced avocado, and fresh chives before serving.
