Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Rinse the jasmine rice under cold water until the water runs clear. In a small saucepan, combine the rice, coconut milk, 0.25 cup of water, and a pinch of sea salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes.
On the prepared baking sheet, toss the broccoli florets and green beans with the coconut aminos, minced garlic, and grated fresh ginger. Spread them in a single layer and roast for 15-18 minutes until tender and lightly charred.
While the vegetables roast, heat the coconut oil in a large skillet over medium-high heat. Add the seasoned chicken breast fillets and cook for 5-6 minutes per side, or until the internal temperature reaches 165°F and the outside is golden brown.
Once the rice is finished, remove it from the heat and let it sit covered for 5 minutes. Fluff with a fork and stir in the lime juice and black pepper.
To serve, portion the coconut rice onto a plate, top with the pan-seared chicken, and arrange the roasted vegetables and fresh pea shoots alongside.
