Seared Salmon with Roasted Asparagus and Cauliflower Mash
Pan-seared wild salmon served over a creamy cauliflower mash with oven-roasted asparagus, finished with a squeeze of bright lemon and fresh dill.
INGREDIENTS
5.5 oz Wild Pink Salmon
1 cup Cauliflower florets
3/4 cup Asparagus spears
1 tsp Extra Virgin Olive Oil
1 clove Garlic
1 tsp Lemon Juice
PREPARATION
Preheat your oven to 400°F and line a small baking sheet with parchment paper.
Toss the asparagus spears with half of the olive oil and a pinch of sea salt, then roast for 12-15 minutes until tender.
Steam the cauliflower florets until very soft, about 8-10 minutes.
While cauliflower steams, heat the remaining olive oil in a non-stick skillet over medium-high heat.
Season the salmon with salt and pepper, then sear for 4-5 minutes per side until the exterior is golden and the center is cooked through.
Drain the steamed cauliflower and blend or mash it with the minced garlic and a splash of lemon juice until creamy.
Plate the cauliflower mash first, top with the seared salmon, and serve the roasted asparagus on the side.
