PREPARATION
Pat the sirloin steak dry with paper towels and season both sides evenly with the sea salt and black pepper.
Heat the avocado oil in a cast-iron skillet over medium-high heat until it begins to shimmer.
Place the steak in the hot skillet and sear for 3 to 4 minutes without moving it to develop a deep golden-brown crust.
Flip the steak and immediately add the ghee, smashed garlic clove, rosemary, and thyme to the side of the pan.
