PREPARATION
Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
Toss trimmed asparagus with 0.5 tsp olive oil and half of the sea salt and black pepper on the prepared baking sheet.
Roast asparagus for 12-15 minutes until tender and slightly charred.
Season pork chops with the remaining sea salt and black pepper on both sides.
Heat the remaining 0.5 tsp olive oil in a heavy skillet over medium-high heat.
Sear pork chops for 4-5 minutes per side until golden brown and the internal temperature reaches 145°F.
Add minced garlic and rosemary to the pan during the last 2 minutes of cooking, basting the pork with the fragrant oils.
