Preheat your oven to 400°F (200°C).
In a cast-iron skillet or oven-safe baking dish, combine the diced red bell pepper and red onion.
Drizzle the vegetables with extra virgin olive oil and season with sea salt, black pepper, smoked paprika, and garlic powder.
Add the ground turkey to the skillet, breaking it into small crumbles with a spatula, and toss to combine with the vegetables and spices.
Roast in the oven for 12 to 15 minutes, or until the turkey is cooked through and the vegetables are tender.
Remove the skillet from the oven and stir in the fresh baby spinach until it begins to wilt from the residual heat.
Use a spoon to create two small wells in the turkey and vegetable mixture, then carefully crack one egg into each well.
Sprinkle the crumbled feta cheese evenly over the top of the dish.
Return the skillet to the oven and bake for an additional 8 to 10 minutes, or until the egg whites are fully set but the yolks remain slightly runny.
Serve immediately while hot and fragrant.
