Herb-Crusted Salmon with Roasted Vegetables
Oven-roasted salmon fillet topped with a fragrant almond-herb crust, served alongside vibrant broccoli and sweet peppers for a crisp and colorful finish.
INGREDIENTS
6.5 oz Salmon fillet
1 cup Broccoli florets
0.5 cup Red bell pepper
1 tsp Extra virgin olive oil
1 tbsp Dijon mustard
1 tbsp Almond meal
0.5 tsp Dried parsley
0.5 tsp Dried dill
0.25 tsp Garlic powder
0.25 tsp Sea salt
0.25 tsp Black pepper
1 tsp Lemon juice
PREPARATION
Preheat your oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper.
Place the broccoli florets and sliced red bell pepper on one side of the baking sheet, drizzle with olive oil, and sprinkle with half of the sea salt and black pepper.
In a small bowl, combine the almond meal, dried parsley, dried dill, and garlic powder to create the herb crust mixture.
Pat the salmon fillet dry with a paper towel and place it on the other side of the baking sheet.
Spread the Dijon mustard evenly over the top of the salmon, then press the almond-herb mixture firmly into the mustard to form a crust.
Season the salmon with the remaining sea salt and black pepper.
Roast in the oven for 12-15 minutes until the salmon flakes easily with a fork and the vegetables are tender-crisp.
Squeeze fresh lemon juice over the salmon and vegetables before serving.
