Seared Salmon with Roasted Asparagus and Brown Rice
Pan-seared salmon and roasted asparagus served over nutty brown rice with a squeeze of fresh lemon and a sprinkle of flaky sea salt.
INGREDIENTS
7 ounces Wild Atlantic Salmon
0.5 cup cooked Brown Rice
1 cup Asparagus spears
1 teaspoon Extra Virgin Olive Oil
1 tablespoon Lemon Juice
PREPARATION
Preheat your oven to 400°F and line a small baking sheet with parchment paper.
Trim the woody ends off the asparagus and toss them on the baking sheet with half of the olive oil and a pinch of sea salt.
Roast the asparagus for 10-12 minutes until tender and slightly charred at the tips.
While the asparagus roasts, pat the salmon fillet completely dry with a paper towel and season with salt and pepper.
Heat the remaining olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan and sear for 4-5 minutes until a golden crust forms, then flip and cook for another 3 minutes.
Warm the pre-cooked brown rice and place it on a plate.
Serve the seared salmon over the rice with the roasted asparagus on the side, finishing with a fresh squeeze of lemon juice.
