1 cup Gold potatoes
1 tbsp Olive oil
1 tbsp Lemon juice
1 tbsp Fresh parsley
1 clove Garlic

1 cup Asparagus spears
PREPARATION
Scrub the potatoes and dice them into half-inch cubes for even cooking.
Heat half of the olive oil in a large skillet over medium heat and sauté the potatoes until they are golden and tender.
Pat the cod fillets dry with a paper towel and season both sides with sea salt and black pepper.
Push the potatoes to the side of the skillet and add the remaining olive oil and minced garlic to the center.
Place the cod fillets in the skillet and sear for about four minutes per side until the fish is opaque and flakes easily.
Add the asparagus spears to the skillet during the last few minutes of cooking to lightly steam them in the garlic oil.
Finish by drizzling fresh lemon juice over the entire dish and garnishing with chopped parsley before serving.
