Chop the zucchini into half-moons, slice the bell pepper into strips, and trim the woody ends off the asparagus.
Place the zucchini, bell pepper, asparagus, and cherry tomatoes on the prepared sheet pan.
Drizzle the vegetables with 1 tablespoon of olive oil and sprinkle with half of the sea salt and black pepper.
Toss the vegetables to coat evenly and spread them out in a single layer, leaving space in the center for the fish.
Pat the cod fillets dry with a paper towel and place them in the center of the sheet pan.
In a small bowl, whisk together the remaining 0.5 tablespoon of olive oil, lemon juice, minced garlic, and dried oregano.
Brush the lemon-herb mixture over the cod fillets and season with the remaining salt and pepper.
Roast for 12-15 minutes, or until the vegetables are tender and the cod is opaque and flakes easily with a fork.
Garnish with fresh chopped parsley and an extra squeeze of lemon before serving.
