Pan-Seared Salmon with Roasted Asparagus
Pan-seared salmon fillets finished with a vibrant lemon-garlic glaze, served alongside crisp-tender roasted asparagus for a bright and satisfying meal.
INGREDIENTS
7 oz Salmon fillet
1 cup Asparagus spears
0.75 tbsp Olive oil
1 clove Garlic
0.5 tsp Sea salt
0.25 tsp Black pepper
1 tbsp Lemon juice
0.5 tsp Dried oregano
PREPARATION
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Trim the woody ends off the asparagus and place them on the baking sheet, tossing with half of the olive oil and a pinch of the salt and pepper.
Roast the asparagus for 12-15 minutes until tender and slightly charred.
Pat the salmon fillet dry with a paper towel and season both sides with the remaining salt, pepper, and dried oregano.
Heat the remaining olive oil in a non-stick skillet over medium-high heat.
Place the salmon skin-side up in the pan and sear for 4-5 minutes until a golden crust forms, then flip.
Add the minced garlic and lemon juice to the pan, spooning the liquid over the salmon as it finishes cooking for another 3-4 minutes.
Serve the pan-seared salmon immediately alongside the roasted asparagus.
