Seared Salmon with Steamed Green Beans and Garlic Mashed Cauliflower
Pan-seared salmon served over creamy garlic-infused cauliflower mash and tender green beans, finished with a squeeze of bright lemon.
INGREDIENTS
6 oz Wild Salmon Fillet
2 cups Cauliflower florets
1 cup Green beans
1 tsp Olive oil
1 tsp Grass-fed butter
2 tbsp Non-fat Greek yogurt
2 cloves Garlic, minced
Fresh lemon wedges
Sea salt and black pepper
PREPARATION
Place cauliflower florets in a steamer basket over boiling water and steam for 10-12 minutes until very tender.
During the last 5 minutes of steaming the cauliflower, add the green beans to the steamer basket to cook until bright green and crisp-tender.
Remove the cauliflower and transfer to a bowl, keeping the green beans warm.
Add minced garlic, Greek yogurt, and grass-fed butter to the cauliflower, then mash with a fork or immersion blender until smooth and creamy.
Season the salmon fillet with sea salt and black pepper.
Heat olive oil in a non-stick skillet over medium-high heat and sear the salmon for 4-5 minutes per side until the exterior is golden and the fish flakes easily.
Plate the garlic mashed cauliflower and green beans alongside the seared salmon.
Garnish with a squeeze of fresh lemon juice before serving.
