Garlic Butter Shrimp Scampi
Sautéed succulent shrimp tossed in a velvety garlic-ghee sauce with whole wheat linguine and a bright squeeze of fresh lemon.
INGREDIENTS
8 oz Shrimp
1.5 oz Whole wheat linguine
0.5 tbsp Ghee
1 tsp Extra virgin olive oil
3 cloves Garlic
0.25 tsp Red pepper flakes
0.5 whole Lemon
1 tbsp Fresh parsley
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Bring a large pot of salted water to a boil and cook the whole wheat linguine according to package directions until al dente.
While the pasta cooks, pat the shrimp dry with paper towels and season them with sea salt and black pepper.
In a large skillet over medium heat, melt the ghee and add the olive oil.
Add the minced garlic and red pepper flakes to the skillet, sautéing for about 1 minute until fragrant but not browned.
Add the shrimp to the skillet in a single layer and cook for 2 minutes per side until pink and opaque.
Squeeze the juice of the half lemon into the skillet and stir to combine with the garlic butter sauce.
Drain the pasta, reserving a splash of pasta water, and add the noodles directly into the skillet with the shrimp.
Toss everything together until the pasta is coated, adding a tablespoon of pasta water if needed to loosen the sauce.
Garnish with freshly chopped parsley and serve immediately.
