Jumbo pasta shells stuffed with a creamy spinach and ricotta blend, baked in a savory turkey marinara sauce for a bubbly and golden finish.
INGREDIENTS
5 oz Ground turkey (93% lean)
0.25 cup Part-skim ricotta cheese
2 whole Jumbo pasta shells
1 cup Fresh spinach
0.5 cup Marinara sauce
1 tbsp Grated parmesan cheese
0.5 oz Shredded part-skim mozzarella cheese
0.5 tsp Olive oil
0.25 tsp Garlic powder
0.25 tsp Dried oregano
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Preheat your oven to 375°F (190°C).
Cook the jumbo pasta shells in a large pot of boiling salted water until al dente, then drain and set aside to cool.
Heat the olive oil in a skillet over medium heat and sauté the ground turkey until fully browned.
Stir the marinara sauce, garlic powder, and dried oregano into the skillet with the turkey and simmer for 5 minutes.
Steam the fresh spinach until wilted, squeeze out all excess liquid thoroughly, and finely chop.
In a small mixing bowl, combine the chopped spinach, ricotta cheese, sea salt, and black pepper until smooth.
Spread half of the turkey marinara sauce into the bottom of a small oven-safe baking dish.
Stuff each cooked pasta shell with a generous portion of the spinach-ricotta mixture and place them into the dish.
Top the shells with the remaining sauce, then sprinkle with the mozzarella and parmesan cheese.
Bake for 15 to 20 minutes until the cheese is melted and the sauce is bubbling.
