Seared Salmon Filet with Roasted Broccoli and Garlic Mash
Pan-seared wild salmon served with crispy roasted broccoli and a creamy garlic-infused cauliflower mash, finished with a squeeze of fresh lemon.
INGREDIENTS
6.5 oz Wild Atlantic Salmon
1.5 cups Broccoli Florets
1.5 cups Cauliflower Florets
2 cloves Garlic
1.5 tsp Avocado Oil
1 tsp Ghee
PREPARATION
Preheat your oven to 400°F and line a baking sheet with parchment paper.
Toss the broccoli florets with half of the avocado oil, salt, and pepper, then roast for 15-20 minutes until the edges are crispy.
While the broccoli roasts, steam the cauliflower florets and whole garlic cloves until they are very tender, about 10-12 minutes.
Drain the cauliflower and garlic thoroughly, then mash or blend with the ghee and a pinch of salt until smooth and creamy.
Season the salmon filet with sea salt and black pepper.
Heat the remaining avocado oil in a non-stick skillet over medium-high heat and sear the salmon for 4 minutes on the skin side.
Flip the salmon and cook for another 3 minutes until the center is just opaque and the exterior is golden.
Serve the seared salmon over a bed of garlic cauliflower mash with the roasted broccoli on the side.
