150g Sweet Potato, cubed
150g Asparagus spears
1.5 tsp Extra Virgin Olive Oil
1 tsp Lemon Juice

PREPARATION
Preheat your oven to 400°F and line a baking sheet with parchment paper.
Toss the cubed sweet potatoes with half of the olive oil, salt, and pepper, then spread them on the baking sheet.
Roast the sweet potatoes for 15 minutes, then move them to one side of the pan and add the asparagus spears.
Drizzle the asparagus with a tiny bit of oil and salt, then roast everything for another 10 minutes until the potatoes are tender and asparagus is slightly charred.
While the vegetables roast, pat the salmon fillet dry with a paper towel and season with salt, pepper, and garlic powder.
