Spinach & Ricotta Stuffed Shells
Jumbo pasta shells stuffed with a savory blend of lean turkey, creamy ricotta, and wilted spinach, then baked in a vibrant tomato sauce until bubbly and golden.
INGREDIENTS
4 whole jumbo pasta shells
4 oz 93% lean ground turkey
0.25 cup part-skim ricotta cheese
2 large egg whites
1 cup fresh spinach
0.5 cup sugar-free marinara sauce
1 tbsp grated parmesan cheese
1 clove garlic
0.25 tsp dried oregano
0.25 tsp sea salt
0.25 tsp black pepper
PREPARATION
Preheat your oven to 375°F (190°C).
Cook the jumbo pasta shells in a large pot of boiling salted water according to package directions until al dente, then drain and set aside.
In a non-stick skillet over medium heat, cook the ground turkey and minced garlic until the turkey is browned and cooked through.
Add the fresh spinach to the skillet and sauté for 1-2 minutes until just wilted, then remove from heat and let cool slightly.
In a medium mixing bowl, combine the cooked turkey and spinach with the ricotta cheese, egg whites, dried oregano, sea salt, and black pepper.
Spread half of the marinara sauce evenly across the bottom of a small baking dish.
Stuff each cooked pasta shell generously with the turkey and ricotta mixture and arrange them in the baking dish.
Spoon the remaining marinara sauce over the top of the shells and sprinkle with the grated parmesan cheese.
Cover the dish with foil and bake for 20 minutes; remove the foil and bake for an additional 5-10 minutes until the sauce is bubbly and the cheese is lightly browned.
