Seared Salmon Fillet with Roasted Asparagus and Sweet Potato Mash
Pan-seared salmon served over creamy mashed sweet potatoes with tender roasted asparagus, finished with a bright squeeze of zesty lemon.
INGREDIENTS
7 oz Wild Atlantic Salmon Fillet
100g Sweet Potato
100g Asparagus Spears
1 tsp Avocado Oil
1 tbsp Fresh Lemon Juice
PREPARATION
Preheat your oven to 400°F (200°C).
Peel and dice the sweet potato into small cubes, then boil in water for 10-12 minutes until tender.
Toss the asparagus spears with half of the avocado oil and a pinch of salt, then spread on a baking sheet and roast for 10-12 minutes.
Drain the sweet potatoes and mash them until smooth, adding a splash of hot water if needed for consistency.
Heat the remaining avocado oil in a non-stick skillet over medium-high heat.
Season the salmon with salt and pepper, then sear for 4-5 minutes per side until the skin is crisp and the fish is cooked through.
Plate the sweet potato mash, top with the roasted asparagus and salmon, and finish with a fresh squeeze of lemon juice.
