Seared Salmon with Garlic Green Beans and Sweet Potato Mash
Pan-seared salmon served over creamy mashed sweet potatoes with garlic-sauteed green beans, finished with a squeeze of lemon for a bright, zesty touch.
INGREDIENTS
7.6 oz Wild Atlantic Salmon Fillet
140g Sweet Potato, peeled and cubed
1 cup Fresh Green Beans
1 tsp Extra Virgin Olive Oil
1 clove Garlic, minced
Pinch of Sea Salt and Black Pepper
Fresh Lemon Wedge
PREPARATION
Place cubed sweet potatoes in a pot of boiling water and cook for 10-12 minutes until fork-tender.
Drain the sweet potatoes and mash thoroughly with a pinch of sea salt until creamy and smooth.
Pat the salmon fillet dry with a paper towel and season both sides with sea salt and black pepper.
Heat half of the olive oil in a non-stick skillet over medium-high heat.
Place salmon skin-side up in the pan and sear for 4-5 minutes, then flip and cook for another 3-4 minutes until the center is just opaque.
In a separate small skillet, heat the remaining olive oil over medium heat and add the green beans and minced garlic.
Sauté the green beans for 5-6 minutes until they are crisp-tender and the garlic is fragrant.
Plate the sweet potato mash, top with the seared salmon, and serve alongside the garlic green beans with a fresh lemon squeeze.
