PREPARATION
Preheat your oven to 400°F and line a large rimmed sheet pan with parchment paper.
In a large mixing bowl, toss the shredded green cabbage and thinly sliced red onion with 0.5 tablespoons of avocado oil, 0.25 teaspoons of sea salt, and 0.25 teaspoons of garlic powder.
Spread the cabbage and onion mixture in an even layer across the prepared sheet pan and roast for 12 minutes until the edges begin to soften.
While the vegetables are roasting, pat the salmon fillet dry with a paper towel and season both sides with the remaining oil, sea salt, garlic powder, and black pepper.
Remove the pan from the oven, push the vegetables to the outer edges, and place the salmon fillet in the center of the pan.
Return the pan to the oven and roast for another 10 to 12 minutes, or until the salmon is opaque and flakes easily with a fork.
