6.5 oz Salmon Fillet
1.5 cups Cauliflower florets
1 cup Green beans
1.5 tsp Extra virgin olive oil
2 tbsp Nonfat Greek yogurt

PREPARATION
Steam the cauliflower florets in a steamer basket over boiling water until very tender, about 10-12 minutes.
While the cauliflower steams, heat half of the olive oil in a non-stick skillet over medium-high heat.
Season the salmon fillet with a pinch of salt and pepper, then place it in the skillet skin-side down.
Sear the salmon for 4-5 minutes per side until the skin is crisp and the fish is cooked through to your preference.
Remove the salmon from the pan and set aside; add the remaining olive oil to the same skillet.
Sauté the green beans and minced garlic in the skillet for 5-6 minutes until the beans are tender-crisp.
Drain the steamed cauliflower and transfer to a blender or food processor with the Greek yogurt, blending until smooth and creamy.
