Garlic Herb Butter Pasta with Shrimp
Sautéed shrimp and whole grain pasta tossed in a silky garlic-herb butter sauce with a bright squeeze of lemon.
INGREDIENTS
2 oz whole wheat pasta
6 oz shrimp
1 tbsp grass-fed butter
3 cloves garlic
1 cup baby spinach
1 tbsp fresh parsley
1 tsp lemon juice
0.25 tsp sea salt
0.25 tsp black pepper
0.13 tsp red pepper flakes
PREPARATION
Bring a large pot of salted water to a boil and cook the whole wheat pasta according to package directions until al dente.
While the pasta cooks, melt the grass-fed butter in a large skillet over medium heat.
Add the minced garlic and red pepper flakes to the skillet, sautéing for 1 minute until fragrant but not browned.
Increase heat to medium-high and add the shrimp, seasoning with sea salt and black pepper.
Cook the shrimp for 2 to 3 minutes per side until pink and opaque, then stir in the baby spinach until just wilted.
Drain the pasta, reserving 2 tablespoons of pasta water, and add both to the skillet.
Toss everything together with fresh parsley and lemon juice to coat the noodles in the glossy sauce.
