Seared Salmon with Garlic Green Beans and Cauliflower Mash
Pan-seared wild sockeye salmon served over a bed of garlic-infused cauliflower mash with a side of snappy sautéed green beans.
INGREDIENTS
6.4 ounces Sockeye Salmon Fillet
2 cups Cauliflower Florets
1 cup Fresh Green Beans
2 teaspoons Olive Oil
1 teaspoon Grass-fed Butter
1 tablespoon Nonfat Greek Yogurt
2 cloves Garlic, minced
PREPARATION
Steam the cauliflower florets until very tender, about 10-12 minutes.
Heat one teaspoon of olive oil in a skillet over medium-high heat while the cauliflower steams.
Season the salmon with salt and pepper and sear for 4-5 minutes per side until golden and cooked through.
Remove the salmon from the pan and add the remaining oil to sauté the green beans with half the garlic until snappy and bright green.
Mash the steamed cauliflower with the remaining garlic, grass-fed butter, and Greek yogurt until smooth and creamy.
Plate the salmon over the cauliflower mash and serve with the garlic green beans.
