Pan-Seared Steak with Herbed Rice
Pan-seared sirloin steak basted in aromatic garlic ghee, served over a bed of fluffy herbed long grain rice and crisp roasted asparagus.
INGREDIENTS
5 oz Sirloin steak
0.5 cup Cooked long grain rice
1 tsp Olive oil
0.5 tbsp Ghee
1 clove Garlic
1 tbsp Fresh parsley
1 cup Asparagus
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Season the sirloin steak evenly on both sides with the sea salt and black pepper.
Heat a cast-iron skillet over medium-high heat and add the olive oil until it shimmers.
Place the steak in the skillet and sear for 3 to 4 minutes per side to achieve a deep golden crust.
During the final minute of cooking, add the ghee and the smashed garlic clove to the pan, tilting it to baste the steak with the melted fat.
Remove the steak from the pan and transfer to a cutting board to rest for at least 5 minutes.
While the steak rests, toss the warm cooked long grain rice with finely chopped fresh parsley.
Steam or lightly sauté the asparagus in the remaining pan juices until tender-crisp and vibrant green.
Slice the steak against the grain and serve immediately over the herbed rice with the asparagus on the side.
