Cajun Salmon Alfredo Pasta
Pan-seared Cajun salmon served over whole grain pasta tossed in a velvety, lightened Alfredo sauce with vibrant bell peppers.
INGREDIENTS
4.25 oz Salmon fillet
1.25 oz Whole grain penne
1 tsp Ghee
1 tsp Cajun seasoning
0.25 cup Greek yogurt
2 tbsp Parmesan cheese
0.5 cup Red bell pepper
0.25 cup Yellow onion
1 clove Garlic
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Cook the whole grain penne in a pot of boiling salted water until al dente, reserving 1/4 cup of the pasta water before draining.
Season the salmon fillet evenly with the Cajun seasoning, sea salt, and black pepper.
Heat the ghee in a large skillet over medium-high heat and sear the salmon for 4-5 minutes per side until cooked through, then remove and set aside.
In the same skillet, sauté the diced yellow onion and sliced red bell pepper until tender, adding the minced garlic for the last minute of cooking.
Reduce the heat to low and stir in the Greek yogurt, parmesan cheese, and reserved pasta water to create a smooth sauce.
Toss the cooked pasta into the sauce until well coated, then top with the seared salmon and serve immediately.
