INGREDIENTS
7 oz Ground beef (93% lean)
0.25 cup Cooked brown rice
2 medium Bell peppers
0.25 cup Yellow onion
1 clove Garlic
0.5 cup Tomato sauce
0.5 tsp Dried oregano
0.25 tsp Sea salt
0.25 tsp Black pepper
1 tbsp Parmesan cheese
PREPARATION
Preheat oven to 375°F (190°C).
Slice the tops off the bell peppers and remove the seeds and membranes.
In a large skillet over medium heat, cook the ground beef and diced onion until the beef is browned and the onion is translucent.
Stir in the minced garlic and cook for 1 minute until fragrant.
Add the cooked brown rice, half of the tomato sauce, dried oregano, sea salt, and black pepper to the skillet, stirring to combine.
Place the bell peppers upright in a baking dish and fill each pepper with the beef and rice mixture.
Top the peppers with the remaining tomato sauce and a sprinkle of parmesan cheese.
Pour a small amount of water into the bottom of the baking dish, cover with foil, and bake for 30 minutes.
Remove the foil and bake for an additional 10-15 minutes until the peppers are tender and the cheese is slightly golden.
