7 oz Wild Atlantic Salmon
2 cups Cauliflower florets
1 cup Green beans
2 tsp Extra virgin olive oil
2 cloves Garlic, minced
1 tbsp Fresh lemon juice
Sea salt and black pepper to taste
PREPARATION
Place cauliflower florets and minced garlic in a steamer basket over boiling water and steam for 10-12 minutes until very tender.
While cauliflower is steaming, add the green beans to the same steamer basket for the final 5 minutes of cooking until bright green and crisp-tender.
Pat the salmon fillet dry with paper towels and season both sides with sea salt and black pepper.
Heat one teaspoon of olive oil in a non-stick skillet over medium-high heat.
Place salmon in the pan skin-side down and sear for 4-5 minutes until skin is crispy, then flip and cook for another 2-3 minutes until desired doneness.
Transfer the steamed cauliflower and garlic to a bowl or food processor, add the remaining teaspoon of olive oil, and mash or blend until smooth and velvety.
Plate the garlic cauliflower mash alongside the steamed green beans and the seared salmon.
