Sweet Chili Shrimp with Rice
Succulent shrimp sautéed with crisp broccoli and peppers in a glossy honey-chili glaze, served over a bed of fluffy jasmine rice.
INGREDIENTS
12 oz Large shrimp
1 cup Cooked jasmine rice
2 tbsp Honey
1 tbsp Tamari
1 tbsp Rice vinegar
1 tsp Sriracha
0.5 tbsp Olive oil
1 tsp Sesame oil
1 cup Broccoli florets
0.5 cup Red bell pepper
1 clove Garlic
0.5 tsp Fresh ginger
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Cook rice according to package instructions if not using pre-cooked rice.
In a small bowl, whisk together the honey, tamari, rice vinegar, and sriracha to create the sweet chili glaze.
Heat the olive oil and sesame oil in a large skillet over medium-high heat.
Add the broccoli and red bell pepper to the skillet, sautéing for 3-4 minutes until tender-crisp.
Stir in the minced garlic and grated ginger, cooking for 30 seconds until fragrant.
Add the shrimp to the pan, seasoning with sea salt and black pepper, and cook for 2 minutes per side until pink and opaque.
Pour the honey-chili sauce over the shrimp and vegetables, tossing well to coat until the sauce thickens into a glossy glaze.
Serve the shrimp and vegetable mixture immediately over the warm jasmine rice.
