Buttery Garlic Herb Mashed Potatoes with Roasted Chicken
Herb-roasted chicken breast served alongside fluffy Yukon gold potatoes mashed with aromatic garlic and silky grass-fed ghee for a comforting, nutrient-dense meal.
INGREDIENTS
5 oz Chicken breast
1 medium Yukon gold potato
0.5 tbsp Ghee
0.25 cup Plain Greek yogurt
2 clove Garlic
1 tsp Fresh rosemary
1 tsp Fresh thyme
0.25 tsp Sea salt
0.25 tsp Black pepper
1 tbsp Avocado oil
PREPARATION
Preheat your oven to 400°F.
Rub the chicken breast with avocado oil, 0.125 tsp sea salt, and 0.125 tsp black pepper.
Place chicken on a parchment-lined baking sheet and roast for 20-25 minutes until the internal temperature reaches 165°F.
Peel and chop the Yukon gold potato into 1-inch chunks.
Place potato chunks in a pot of salted water and boil for 12-15 minutes until fork-tender.
While potatoes boil, mince the garlic cloves and finely chop the fresh rosemary and thyme.
Drain the potatoes and return them to the pot over low heat for 1 minute to evaporate excess moisture.
Add the ghee, Greek yogurt, minced garlic, chopped herbs, and the remaining salt and pepper to the pot.
Mash the ingredients together until the potatoes are smooth and creamy.
Slice the roasted chicken breast and serve it immediately over the warm mashed potatoes.
