Seared Steak & Pepper Quesadillas
Pan-seared flank steak and crisp bell peppers folded into a toasted whole wheat tortilla with melted sharp cheddar for a satisfyingly crunchy finish.
INGREDIENTS
5 oz Flank steak
0.5 tsp Avocado oil
0.25 tsp Sea salt
0.25 tsp Black pepper
0.25 tsp Ground cumin
0.25 tsp Chili powder
0.5 cup Bell pepper
0.25 cup Red onion
1 medium Whole wheat tortilla
0.4 oz Sharp cheddar cheese
PREPARATION
Slice the flank steak against the grain into very thin strips and toss with sea salt, black pepper, cumin, and chili powder.
Heat half the avocado oil in a large skillet over medium-high heat and sauté the sliced bell peppers and onions until tender-crisp.
Remove vegetables from the pan, add the remaining oil, and sear the steak strips for 2-3 minutes until browned and caramelized.
Wipe the skillet clean, place the tortilla in the pan, and layer the cheese, steak, and vegetables on one half.
Fold the tortilla over and cook for 2 minutes per side until the cheese is melted and the exterior is golden and crisp.
