PREPARATION
Place the diced sweet potatoes in a pot of boiling water and cook for 10-12 minutes until fork-tender.
While potatoes cook, steam or blanch the green beans for 3 minutes until vibrant green and slightly tender, then drain.
Season the salmon fillet with sea salt and black pepper.
Heat half of the avocado oil in a non-stick skillet over medium-high heat and sear the salmon for 4-5 minutes per side until golden and cooked through.
