Heat olive oil in a skillet over medium heat and sauté the ground turkey with minced garlic until fully browned.
In a small bowl, whisk together the ricotta, egg, chopped fresh basil, oregano, sea salt, and black pepper.
Spread a thin layer of marinara sauce on the bottom of a small baking dish, then add a layer of zucchini planks.
Top the zucchini with half of the turkey and half of the ricotta mixture, then repeat the layers once more.
Spread the remaining marinara over the top, sprinkle with mozzarella cheese, and bake for 20 minutes until the cheese is melted and bubbly.
