5 oz Chicken breast
1 medium Yukon Gold potato
2 tsp Ghee
1 cup Green beans
1 clove Garlic
0.25 tsp Dried thyme
0.25 tsp Dried rosemary
0.5 tsp Sea salt
0.25 tsp Black pepper
2 tbsp Chicken bone broth
PREPARATION
Peel and chop the potato into 1-inch cubes. Place in a pot of salted water, bring to a boil, and cook for 12-15 minutes until tender.
While potatoes cook, season the chicken breast with half the salt, pepper, thyme, and rosemary.
Heat 1 tsp of ghee in a skillet over medium-high heat. Add the chicken and sear for 6-7 minutes per side until the internal temperature reaches 165°F.
In the last 2 minutes of cooking the chicken, add the minced garlic to the pan to fragrance the meat. Remove chicken and let rest.
Steam the green beans for 4-5 minutes until bright green and crisp-tender.
Drain the potatoes. Mash with the remaining 1 tsp of ghee, bone broth, and the remaining salt and pepper until smooth.
