Lemon Herb Rice Pilaf with Seared Chicken
Simmered chicken breast and basmati rice infused with a zesty lemon-herb broth for a bright and fragrant meal that satisfies with every forkful.
INGREDIENTS
5 oz Chicken breast
0.25 cup Basmati rice
0.5 cup Chicken bone broth
1 tsp Extra virgin olive oil
1 tbsp Fresh lemon juice
0.5 tsp Lemon zest
1 clove Garlic
2 tbsp Fresh parsley
0.25 tsp Sea salt
0.25 tsp Black pepper
2 tbsp Scallions
PREPARATION
Pat the chicken breast dry with a paper towel and season both sides with sea salt and black pepper.
Heat the extra virgin olive oil in a skillet over medium-high heat and sear the chicken until golden brown and cooked through, then remove and set aside.
Add the minced garlic and dry basmati rice to the same skillet, toasting the grains for about one minute until they smell slightly nutty.
Pour in the chicken bone broth, lemon juice, and lemon zest, stirring to scrape up any browned bits from the bottom of the pan.
Bring the liquid to a boil, then reduce the heat to low, cover with a tight-fitting lid, and simmer for 15 minutes until the broth is fully absorbed.
Remove from heat and let the rice rest covered for 5 minutes before fluffing with a fork and stirring in the fresh parsley and sliced scallions.
