1 tbsp Fresh parsley
PREPARATION
Preheat oven to 400°F.
Toss cubed butternut squash with half of the olive oil, sea salt, and black pepper on a baking sheet.
Roast squash for 25 minutes until edges are caramelized and tender.
Pat raw shrimp dry and season with the remaining sea salt and black pepper.
Heat a large skillet over medium-high heat with the remaining olive oil.
Add shrimp to the skillet and sear for 2 minutes per side until pink and opaque.
