Slow Cooker Herb-Garlic Chicken
Tender chicken breast slow-cooked with aromatic garlic and fresh herbs, served alongside buttery-soft carrots and baby potatoes in a savory broth.
INGREDIENTS
5 oz Chicken breast
0.5 cup Baby potatoes
0.5 cup Carrots
0.25 cup Yellow onion
3 cloves Garlic
1 tbsp Extra virgin olive oil
0.5 cup Low-sodium chicken broth
0.5 tsp Dried rosemary
0.5 tsp Dried thyme
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Chop the carrots and onions into bite-sized pieces and halve the baby potatoes.
Mince the garlic cloves and whisk them together with the olive oil, rosemary, thyme, salt, and pepper in a small bowl.
Place the chicken breast, potatoes, carrots, and onions into the slow cooker.
Pour the herb-oil mixture over the ingredients and toss gently to coat everything evenly.
Add the chicken broth to the bottom of the slow cooker, being careful not to wash the herbs off the chicken.
Cover and cook on low for 6-7 hours or on high for 3-4 hours until the chicken is tender and the vegetables are soft.
Remove the chicken and slice it before serving with the vegetables and a drizzle of the remaining cooking juices.
