Seared Salmon with Steamed Green Beans and Garlic Mashed Cauliflower
Pan-seared salmon served with tender steamed green beans and garlic-infused mashed cauliflower, blended until perfectly creamy.
INGREDIENTS
6.5 oz Salmon Fillet
2 cups Cauliflower florets
1 cup Green beans
1 tsp Olive oil
2 tbsp Nonfat Greek yogurt
2 cloves Garlic, minced
PREPARATION
Steam the cauliflower florets in a steamer basket over boiling water until very tender, approximately 10 to 12 minutes.
During the last 5 minutes of steaming the cauliflower, add the green beans to the steamer basket and cook until they are bright green and crisp-tender.
Transfer the steamed cauliflower and minced garlic to a food processor or blender, add the Greek yogurt, and process until the mixture is smooth and creamy.
Pat the salmon fillet dry with a paper towel and season both sides with a pinch of sea salt and black pepper.
Heat the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the skillet skin-side up and sear for 4 minutes until a golden crust forms.
Flip the salmon and cook for an additional 3 to 4 minutes until the fish is opaque and flakes easily with a fork.
Plate the garlic mashed cauliflower, top with the seared salmon, and serve the steamed green beans on the side.
