5.5 oz Wild Salmon Fillet
150g Sweet Potato, cubed
100g Fresh Green Beans
1 tbsp Extra Virgin Olive Oil
Sea salt and black pepper to taste

PREPARATION
Bring a pot of water to a boil and cook the cubed sweet potatoes until fork-tender, about 10-12 minutes.
While potatoes cook, place a steamer basket over another pot of boiling water and steam the green beans for 5-6 minutes until bright green and crisp-tender.
Pat the salmon fillet completely dry with a paper towel and season both sides with sea salt and black pepper.
Heat half of the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan, skin-side down, and sear for 4-5 minutes until the skin is crispy, then flip and cook for another 2-3 minutes.
Drain the sweet potatoes and mash them thoroughly with the remaining half of the olive oil and a pinch of salt until smooth.
Plate the sweet potato mash, top with the seared salmon, and serve alongside the steamed green beans with a fresh squeeze of lemon.
