Preheat your oven to 400°F and line a large baking sheet with parchment paper.
Place the broccoli florets on the baking sheet and toss with 0.5 tbsp of olive oil, half of the sea salt, and half of the black pepper.
Spread the broccoli in a single layer and roast for 15-20 minutes until the edges are golden and crispy.
While the broccoli roasts, season the chicken breast evenly on both sides with the dried thyme, dried rosemary, and the remaining salt and pepper.
Heat the remaining 0.5 tbsp of olive oil in a non-stick skillet over medium-high heat.
Add the chicken to the skillet and sear for 6-7 minutes per side, or until the internal temperature reaches 165°F.
During the final minute of cooking, add the minced garlic and lemon juice to the pan, swirling to coat the chicken in the bright glaze.
Remove from heat and let the chicken rest for 3 minutes before slicing.
Serve the lemon-herb chicken alongside the roasted broccoli, drizzling any remaining pan juices over the top.
