Smoked Pulled Pork Nachos
Smoked pulled pork layered over crisp bell pepper chips and topped with melted sharp cheddar and cool Greek yogurt for a smoky and satisfying crunch.
INGREDIENTS
5 oz smoked pulled pork
2 cups mini bell peppers
0.5 oz sharp cheddar cheese
2 tbsp nonfat plain Greek yogurt
2 tbsp fresh salsa
1 tbsp pickled jalapeños
1 tbsp fresh cilantro
0.25 tsp sea salt
0.25 tsp black pepper
PREPARATION
Preheat your oven broiler to high and line a large baking sheet with parchment paper.
Slice the mini bell peppers in half lengthwise and remove the seeds and ribs to create small scoopable chips.
Arrange the pepper halves in a single layer on the prepared baking sheet and season lightly with sea salt and black pepper.
Evenly distribute the smoked pulled pork into each pepper cup.
Sprinkle the shredded sharp cheddar cheese over the top of the pork-filled peppers.
Place the baking sheet under the broiler for 3 to 5 minutes until the cheese is melted and bubbly and the peppers are slightly charred.
Remove from the oven and top each nacho with a small amount of fresh salsa and a pickled jalapeño slice.
Finish with a dollop of Greek yogurt and a sprinkle of fresh cilantro before serving warm.
