Pan-Seared Salmon with Roasted Broccoli
Pan-seared salmon fillet served with crispy roasted broccoli and salty feta crumbles for a clean and nourishing lunch.
INGREDIENTS
8 oz Salmon fillet
1.5 cups Broccoli florets
0.25 oz Feta cheese
0.5 tsp Extra virgin olive oil
0.5 tsp Sea salt
0.25 tsp Black pepper
0.5 tsp Garlic powder
1 tbsp Lemon juice
PREPARATION
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Toss the broccoli florets with half of the olive oil, half of the sea salt, and the garlic powder on the prepared baking sheet.
Roast the broccoli for 15 to 18 minutes until the edges are golden and tender.
Pat the salmon fillet dry with a paper towel and season both sides with the remaining sea salt and black pepper.
Heat a non-stick skillet over medium-high heat with the remaining olive oil.
Place the salmon skin-side down in the pan and sear for 4 to 5 minutes until the skin is crispy and releases easily.
Flip the salmon carefully and cook for another 3 to 4 minutes until the internal temperature reaches your desired level of doneness.
Plate the salmon alongside the roasted broccoli, then top with crumbled feta cheese and a fresh squeeze of lemon juice.
