PREPARATION
Preheat your oven to 400°F (200°C) and line a small baking sheet with parchment paper.
In a bowl, toss the broccoli florets with half of the olive oil and a pinch of the sea salt and black pepper.
Spread the broccoli on the prepared baking sheet and roast for 15-18 minutes until the edges are slightly charred.
While the broccoli roasts, mince the garlic and combine it with the dried oregano, thyme, remaining salt, and pepper.
Rub the herb and garlic mixture evenly over both sides of the chicken breast.
Heat the remaining olive oil in an oven-safe skillet over medium-high heat. Sear the chicken for 3-4 minutes on one side until a golden crust forms.
Flip the chicken and transfer the skillet to the oven for the last 8-10 minutes of the broccoli's roasting time, or until the chicken reaches an internal temperature of 165°F.
Remove from the oven, drizzle the lemon juice over the chicken and broccoli, and let the meat rest for 5 minutes before serving.
