Preheat your oven to 400°F and line a large baking sheet with parchment paper.
Slice the bell peppers, zucchini, and red onion into thin strips.
Place the vegetables on the baking sheet and toss with olive oil, half of the sea salt, and half of the black pepper.
Spread the vegetables in a single layer and roast for 15 to 18 minutes until they are tender and show slight char marks.
While the vegetables roast, heat a non-stick skillet over medium-high heat.
Add the ground turkey to the skillet, breaking it into small crumbles with a wooden spoon or spatula.
Season the turkey with the remaining salt, pepper, garlic powder, and dried oregano.
Cook the turkey until it is fully browned and no longer pink, which should take about 7 to 9 minutes.
Warm the whole wheat tortilla in a dry pan or microwave for 10 seconds to make it pliable.
Spread the hummus down the center of the tortilla.
Layer the cooked turkey and roasted vegetables over the hummus.
Fold the bottom of the tortilla up, tuck in the sides, and roll tightly to serve.
