PREPARATION
Peel and cube the sweet potato, then place in a pot of boiling water until fork-tender, about 12-15 minutes.
Drain the sweet potatoes and mash them thoroughly with a pinch of sea salt until smooth and creamy.
Pat the salmon fillet dry with a paper towel and season both sides with sea salt and black pepper.
Heat half of the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the skillet skin-side down and sear for 4-5 minutes until the skin is golden and crisp.
Flip the salmon and cook for another 3-4 minutes until cooked through to your preference, then remove from the pan.
In the same skillet, add the remaining oil, minced garlic, and green beans.
