Seared Salmon Fillet with Steamed Asparagus and Cauliflower Mash
Pan-seared salmon served over creamy cauliflower mash with tender steamed asparagus, finished with a squeeze of zesty lemon.
INGREDIENTS
6 oz Wild-Caught Salmon Fillet
2 cups Cauliflower florets
1 cup Asparagus spears
2 tbsp Non-fat Greek Yogurt
1 tsp Ghee
1 tsp Avocado Oil
1 tbsp Fresh Lemon Juice
1 clove Garlic, minced
PREPARATION
Steam the cauliflower florets until very tender, about 10-12 minutes.
While cauliflower is steaming, trim the woody ends off the asparagus and steam them for 4-5 minutes until bright green and tender-crisp.
Pat the salmon fillet dry with a paper towel and season with salt and pepper.
Heat avocado oil in a stainless steel or cast iron skillet over medium-high heat.
Place salmon skin-side down in the hot pan and sear for 4-5 minutes until skin is crispy, then flip and cook for another 2-3 minutes.
Drain the steamed cauliflower thoroughly and place in a blender or food processor with the Greek yogurt, ghee, minced garlic, and a pinch of salt.
Blend the cauliflower until smooth and creamy.
Plate the cauliflower mash, top with the seared salmon, and serve the asparagus on the side with a fresh squeeze of lemon juice.
