Herb-Crusted Salmon with Roasted Vegetables
Succulent salmon fillets baked with a zesty herb-mustard crust, served alongside vibrant roasted broccoli and peppers for a crisp, nutrient-dense finish.
INGREDIENTS
7 oz Salmon fillet
1 cup Broccoli florets
1 cup Red bell pepper
0.5 tbsp Olive oil
1 tbsp Dijon mustard
0.5 tsp Dried parsley
0.5 tsp Dried dill
0.25 tsp Garlic powder
0.25 tsp Sea salt
0.25 tsp Black pepper
1 tsp Lemon juice
PREPARATION
Preheat your oven to 400°F and line a large rimmed baking sheet with parchment paper.
Cut the broccoli into bite-sized florets and slice the red bell pepper into thin strips.
Toss the broccoli and peppers on the baking sheet with olive oil and half of the sea salt and black pepper.
In a small mixing bowl, combine the Dijon mustard, lemon juice, dried parsley, dried dill, garlic powder, and the remaining salt and pepper.
Place the salmon fillet on the baking sheet next to the vegetables and spread the herb-mustard mixture evenly over the top of the fish.
Roast for 12 to 15 minutes, or until the salmon is opaque and flakes easily with a fork and the vegetables are tender with slightly charred edges.
