In a large heavy-bottomed pot over medium heat, whisk the avocado oil and cassava flour constantly for 5-8 minutes until it turns a deep chocolate brown color to create the roux.
Add the diced onion, green bell pepper, and celery to the roux and sauté for 5 minutes until the vegetables begin to soften.
Stir in the minced garlic, sliced andouille sausage, and cubed chicken breast, cooking for another 3-4 minutes to brown the meat slightly.
Slowly pour in the chicken bone broth while stirring to combine, then add the creole seasoning, cayenne pepper, sea salt, and black pepper.
Bring the mixture to a boil, then reduce heat to low and stir in the sliced okra.
Cover and simmer for 20-25 minutes until the gumbo has thickened and the flavors have melded.
While the gumbo simmers, steam or sauté the cauliflower rice in a separate pan until tender.
Serve the hot gumbo over the cauliflower rice and garnish with freshly chopped parsley.
