PREPARATION
Heat the ghee in a medium non-stick skillet over medium-high heat until shimmering.
Add the Canadian bacon slices to the pan and sear for 1-2 minutes per side until lightly browned.
Remove the bacon and set aside; in the same pan, pour in the egg whites.
Carefully crack the whole eggs on top of the whites, keeping the yolks intact.
Season with sea salt and black pepper, then cover the pan with a lid for 2-3 minutes until the whites are set but yolks remain runny.
