Pan-Seared Steak with Garlic Herb Butter
Tender top sirloin steak pan-seared to a succulent finish and basted with aromatic garlic-herb butter, served alongside crisp-tender lemon asparagus.
INGREDIENTS
6 oz Top Sirloin Steak
1 tbsp Grass-fed Butter
1 tsp Extra Virgin Olive Oil
1 clove Garlic
1 tsp Fresh Rosemary
1 tsp Fresh Thyme
0.25 tsp Sea Salt
0.25 tsp Black Pepper
1 cup Asparagus
1 tsp Lemon Juice
PREPARATION
Pat the steak dry with paper towels and season both sides evenly with sea salt and black pepper.
Heat the extra virgin olive oil in a cast-iron skillet over medium-high heat until it begins to shimmer.
Place the steak in the hot skillet and sear undisturbed for 3-4 minutes to develop a deep golden crust.
Flip the steak and reduce the heat to medium-low.
Add the grass-fed butter, smashed garlic clove, rosemary, and thyme to the side of the pan.
Tilt the skillet slightly and use a large spoon to continuously baste the steak with the melting herb butter for 1-2 minutes until it reaches your desired doneness.
Transfer the steak to a plate or cutting board and allow it to rest for at least 5 minutes to lock in the juices.
While the steak rests, add the asparagus to the same skillet and sauté in the remaining herb butter for 3-4 minutes until bright green.
Finish the asparagus with a squeeze of fresh lemon juice and serve alongside the sliced steak.
