Preheat your oven to 375°F (190°C) and place a small oven-safe ramekin or baking dish on a sheet pan.
Melt the grass-fed butter in the microwave or a small pan, then stir in the finely chopped chives, parsley, and garlic powder.
Place the fresh spinach at the bottom of the baking dish and drizzle half of the herb butter over the leaves.
Pour the liquid egg whites over the spinach, then carefully crack the three whole eggs on top, keeping the yolks intact.
Drizzle the remaining herb butter over the eggs and season with sea salt and black pepper.
Sprinkle the grated parmesan cheese evenly over the top.
Bake for 12-15 minutes until the egg whites are fully opaque and set, but the yolks are still slightly jiggly.
Remove from the oven and let rest for 2 minutes before serving directly from the dish.
